8 golden rules for healthy meat consumption during the holiday

Dr. Faculty Member Bioengineer Ece Yıldız Öztürk stated that while setting tables befitting the spirit of the holiday, health should also be taken into consideration.
Öztürk, who listed 8 golden rules for healthy meat consumption, said, " The day should start with a healthy, light breakfast, meat should be consumed in moderation after resting, healthy cooking methods should be preferred, meat should not be consumed alone but on colorful tables, water consumption is even more important during the holiday, the traditional measure for dessert: eat in moderation, those in risk groups should be especially careful, physical activity should be increased ."
Dr. Faculty Member Ece Yıldız Öztürk drew attention to the fact that holiday tables require attention in terms of health as well as abundance, and said, "Suddenly changing eating habits during Eid al-Adha, especially excessive and incorrectly cooked red meat consumption, can invite many health problems such as digestive problems, high blood pressure, and increased cholesterol. The day should be started with a healthy, light breakfast. Boiled eggs, whole grain bread, olives, low-salt cheese, tomatoes, cucumbers, parsley, and greens can be consumed with light tea as a light but balanced breakfast suggestion. Meat should be rested because freshly cut meat contains rigor mortis. This muscle stiffness both makes digestion difficult and reduces cooking quality."
"EXCESSIVE MEAT CONSUMPTION CAN CAUSE FLUID IMBALANCE"Öztürk, who stated that "Letting the meat rest in the refrigerator for at least 24 hours after slaughtering both increases its flavor and does not tire the gastrointestinal system," said, "Instead of high-temperature cooking techniques such as frying and barbecuing, methods such as grilling, boiling or baking should be preferred. Meat should be consumed on colorful tables. In every meat meal, a balance should be achieved with fresh vegetables, colorful salads, whole grain products (bulgur, whole wheat bread) and fiber-rich foods such as olive oil dishes. Excessive meat consumption during the holiday and holiday meals can cause fluid imbalance in the body. Water plays a key role in regulating metabolism, eliminating toxins and healthy functioning of the digestive system. In addition, holiday desserts usually have a high glycemic index and saturated fat content. This is especially harmful in terms of blood sugar and insulin resistance. Instead of syrupy desserts, milky or fruit-based light alternatives should be preferred. For individuals with hypertension, diabetes and heart disease, consumption of lean, low-salt, controlled-cooked meat is vital.
