Freezing bread has become an increasingly common practice in homes and bakeries, whether to avoid waste or to keep it fresher longer.

In fact, some people believe that placing this food in the refrigerator before eating it could help with weight loss. But how accurate is this belief?

When bread is sliced, packaged, frozen, and then toasted, resistant starches are generated. This process, better known as starch retrogradation , is where these macromolecules reorganize due to the cold, creating a stronger barrier.

Resistant starches are not fully digested in the small intestine and reach the colon intact, where they act as a prebiotic fiber. In other words, they contribute to better digestive health.

Likewise, these components generate less glucose in the blood and, therefore, a lower insulin response. They also increase the feeling of satiety.

This method can also be applied to other foods such as rice, pasta, and potatoes, which already contain resistant starch when cooked. In fact, if they are allowed to cool, they will generate more of it.

Keep in mind that while this practice can have health benefits, it's not a quick fix. It can only support sustainable weight loss when combined with good eating habits, as it doesn't reduce calories or make it low-carb.

In that sense, the impact is modest, and should be seen as a complement to a healthy eating pattern.
