Parisians never refuse discovery and surprise. Near the Gare de l'Est, this restaurant is astonishing.
You cross the threshold and the first impression is that of a bistro: large bay windows overlooking the street, cement tiles on the floor, beige walls, exposed stone, emerald green velvet benches, open kitchen.
First surprise, when you are offered the menu: no dishes are announced, only the price of the two proposals, in 4 or 6 courses (59 € or 75 €). The chef, Maurizio Madaio, ex-second of the 2-star David Toutain , is the sole master on board. His suggestions are all defined by the suppliers' arrivals. The originality of this restaurant, the bias of its creator, Florent Piard, is to let the producers speak, all practicing organic farming, refusing the dictates of mass consumption. Only vegetables, fruits and ingredients grown in mainland France are allowed to visit the kitchens... Don't expect a vanilla dessert or a chocolate tart. One exception: coffee and citrus fruits "imported" from Corsica.
