Alain Passard's 3-star Arpège restaurant goes vegan

Starting July 21, the chef from Rue de Varenne will no longer cook any animal products, making his restaurant the only three-star plant-based restaurant in France.
A new chapter is quietly opening for L'Arpège (Paris 7th ). Already focused on vegetable cuisine, the restaurant, which has been awarded three Michelin stars for 29 years, will no longer serve meat, fish, or any other animal protein as of July 21.
Alain Passard announced this new direction on his website, writing: “My passion for the seasons invites me today to write a new chapter. The garden has always guided my hand and nourished my inspiration. Thus, starting July 21, 2025, the Arpège restaurant will celebrate exclusively plant-based cuisine. Our vegetables, fruits, herbs, flowers… and the honey from our hives will be the new notes of our score. It is with the enthusiasm of a chef and confidence—yours, so precious—that I look forward to sharing this journey.”
The chef, born in Brittany and trained by Alain Senderens , from whom he bought the Archestrate restaurant on rue de Varenne in 1986 and renamed it Arpège, had already surprised the gastronomic scene by removing red meat from his menu at the end of the 1990s. He, who distinguished himself at the time by his skills as a roaster, has since become one of the leaders in vegetable cuisine, which he sources in particular from his own vegetable gardens located in Eure and Sarthe.

While many French chefs, from Alain Ducasse to Mauro Colagreco, Régis Marcon, and Michel Bras, are taking a closer look at their approach to vegetables and are careful to reduce meat consumption, Arpège has become France's first three-star plant-based restaurant. It joins Daniel Humm's Eleven Madison Park in New York.
