Tab'z microbrewery triples its production area

Feeling cramped in his basement, Mathieu Guignot decided to move his Tab'z microbrewery to 10, rue du 8-Mai-1945. The inauguration of his new premises took place yesterday in the late afternoon.
Yesterday at 6 p.m., the Rue du 8-Mai-1945 was plunged into darkness. Only number 10 was still lit. Mathieu Guignot was inaugurating the new premises of his microbrewery, Tab'z. Nearly fifty people—friends, family, and customers—came to discover the new production site of Chaumont's only beer.
“Previously, I used the basement of my house and a bit of the ground floor for this second business. Since the beginning of 2025, I felt cramped and that the situation wasn't ideal for further development. Plus, having a microbrewery in your home doesn't exactly help with work-life balance.” The success of the various beers, like the blonde, also explains his move.
“It was through a friend who is an entrepreneur that I found my new premises on Rue du 8-Mai-1945. He was renovating a building for a private individual. I could have waited a bit before moving my microbrewery, but I didn't want to miss this opportunity. Besides, it's two minutes from my home. I've gone from about sixty square meters to over one hundred square meters.”
A larger space means more equipment. "I've upgraded to 500-liter tanks to meet demand. I used to have tanks smaller than 200 liters." He hopes to double, or even triple, his annual production. While "the bulk of the work was completed three weeks ago,"Tab'z 's new premises are still evolving. "I'm not going to rush things. Initially, I'll gradually increase my beer production. Once I've settled in, I plan to develop a tasting area, as well as a sales area. However, that won't happen before 2026. In the future, I'd also like to offer tours."
Today, available in several shops in Chaumont and beyond, and also featured at the Chalindrey and Chaumont beer festivals, the story of the Tab'z microbrewery is quite recent. "It all started with a simple beer-making kit given to me by my wife more than three years ago. It contained only a fermentation tank and a thermometer. From there, I began my research, browsing forums and professional websites to get the right equipment and the essential knowledge for making good beer. The more I researched, the more my passion grew. At first, I made a bit of a mess in the kitchen."
Before embarking on his professional career, the Chaumont native completed a week of training in the Oise region, specifically at the Duchmann Brewery in Chaumont-en-Vexin in 2022. "This allowed me to handle the administrative procedures more calmly, such as obtaining customs authorization."
Today, Mathieu Guignot primarily produces blonde, amber, triple, and white beers. The formats are: keg, 33 cl, and 50 cl. With this move from his basement to a space of about 100 square meters, this local success story proves that with passion and perseverance, a simple brewing kit can be transformed into a true artisanal business.
