Which knife trio do you really need? Unless you cook in a professional kitchen, you can usually get by with three knives. The most useful is probably the medium-sized all-rounder – for example, a classic European chef's knife with an average blade length of about 20 centimeters. A smaller paring or vegetable knife is also indispensable. It's perfect for chopping onions, peeling fruit and vegetables, and all fine work. If you want to regularly cut crisp bread, you'll also need a long, serrated bread knife. When in doubt, it's better to buy a few quality knives than large sets of dubious quality.
